When I was growing up, my parents couldn’t keep milk in the house. My siblings and I would go through it like water, literally. If we were outside playing and wanted to get a drink to quench our thirst, we would always go for a glass of milk; the strange things kids do…or maybe that was just us lol! After I had my son and started to give him cow’s milk, he had a few issues with digesting it and his doctor suggested I switch him to soy or nut milk. Up until recently I have been buying the shelf stable cartons of nut milk and then I discovered how easy it was to make my own…GOODBYE store brought nut milk and HELLO to the fresh thing! Like seriously, it’s quite possibility the easiest thing I’ve ever made and it tastes so much better than the store brought stuff. Now don’t get me wrong, I still use it from time to time, but there’s nothing like pouring a cup of fresh, ice cold nut milk onto a bowl of cereal or having a drink of it right out of a glass. Its so lush and creamy you won’t believe that you made it yourself!
Here’s what you need to make your own:
1 cup of raw nuts of your choice (I love to use cashews but I recently tried hazelnut and I’m obsessed)
Sweetener of choice
Extras of choice
Bowl or container for soaking and straining nuts
Fine mesh strainer or nut bag
Blender (high powered is not necessary)
Soak nuts of choice for a minimum of 8 hours in 3 cups of water; overnight is best though
Drain and rinse nuts well then add to your blender
Add 4 cups of water to your blender (less for a thicker milk, more for a thinner milk)
A pinch of sea salt (this will bring out the flavor in the nuts)
*Add sweetener (I use dates but you can use agave, honey, maple syrup or leave it plain)
*Add extras (I use cinnamon but you can use vanilla beans or anything you like; strawberry nut milk anyone??)
Blend until smooth (I normally blend for about 2-4 min but this depends on the power of your blender)
*Pour blended nut milk into a fine mesh strainer or nut bag to separate pulp for smoother milk
Drink and enjoy!
Your nut milk should last 2-3 days in the refridge but mine never lasts that long lol

*note your nut milk will settle even after straining; this is normal, just shake to combine before using
*some people like to blend their nut milk first, strain and blend their milk again with the sweeteners and extras added. I have found that this doesn’t really make a difference with the final product. Try it both ways and see what method you like!
*you don’t have to strain your nut milk, but if you want a smother texture, this is recommended
*WAIT!!! Don’t throw the pulp away; you can use it in smoothies or baking. Just store in the fridge and it will last for about 2-3 days.
